On Monday, June 1, Lincoln Culinary Institute (formerly Florida Culinary Institute) hosted a wonderfully fun and amazingly creative student culinary competition, A Day at the Beach! In total, seven student teams participated, Beaches of the World, Florida Cracker Shacks, Flock of Seagulls, Rock Lobster, Mahi Mahi’s, Caribbean Sistahz, and Beach Blanket Bingo. The weather was perfectly suited to the outdoor event and the overall vibe of the day was one of high spirits and good times! Frisbee games, dunk tanks, a flying fish toss (with plush toy fish!), beach music, water balloons, sunshine (and sunscreen!) all contributed to the atmosphere, but the real star of the show was, of course, the incredible display of delicious food!
Food and drinks were delivered conveyor-belt style to the judging table, and the judges enjoyed every last bite! The dishes were beyond innovative, showing inspiration from beaches and countries the world over! Each team did an excellent job showing the judges and their fellow competitors just how enjoyable a day at the beach can be. Scoring was quite the difficult task given the level of culinary achievement and ambition on display all around!
Upon careful consideration of each teams’ booths, atmosphere, creativity, and of course, the presentation and flavor of their food, the judges made the following determinations: 1st Place went to Team Flock of Seagulls; 2nd Place was captured by Team Rock Lobster; and 3rd Place belonged to Team Caribbean Sistahz!
Flock of Seagulls’ menu consisted of a Lobster Bisque Crostini, Surf and Turf with Chimichurri Grilled Skirt Steak and California Beach Fish Taco, and for dessert, a Coconut Duo Dessert with a Rice Pudding Parfait layered with Macaroon and Strawberry Mango Salsa and Pina Colada Cheesecake. Rock Lobster’s menu consisted of Shrimp Skewers with Jerk Sauce, Monica’s Divine Dip, a Bratwurst Burger with Cole Slaw and Potato Salad, and Banana cheesecake. Caribbean Sistahz provided a Marlin Cutte’, Blackened Snapper with Coconut Mango Salsa served with Sweet Yams and Plantains, and topped it all off with a Tropical Parfait and Caribbean Punch. Yum!
In addition to the food, fun and games, the dunk tanks and event day bake sale raised over $700.00 to be donated to Quantum House, a West Palm Beach area charitable institution that works to provide a caring and supportive place for the families of ill or injured children while they are in treatment.
Congratulations to everyone who participated!
